Spicy, but not too warm, fresh, but not too cool, and bursting with flavour. This got A-LOT of thumbs up at family dinner last weekend!


  • Qtr cup sugar
  • Qtr cup water
  • Knob of fresh ginger, cut into small pieces.
  • Handfuls of ice 
  • 15ml ginger syrup
  • 60ml grapefruit juice
  • 30ml lemon juice
  • 45ml Washhouse Citrus Gin
  • 60ml soda water


  1. First, make the ginger syrup, combining sugar, water, and ginger in a small saucepan over low heat. Simmer for about 10 minutes, then strain out ginger pieces and set aside to allow to cool to room temperature.
  2. In a cocktail shaker combine ice, 15ml pre-made ginger syrup, grapefruit juice, lemon juice, and Waitoki Washhouse Citrus gin. 
  3. Shake it like you mean it.
  4. Place ice in a glass, pour in the cocktail ingredients and top up with soda water.
  5. Garnish with rosemary.
  6. Stir gently before enjoying.
